Veggie-Bowl

Legumes, vegetables, and grains are very versatile and give you the option to experiment with different kind of veggie-bowls. 

Preparation time: 35 minutes (after soaking the lentils)

Ingredients:

1 cup of lentils/chickpeas/beans soaked overnight 

3 garlic cloves, crushed

½ leek, diced

1 cube of vegetable broth

1 cup of quinoa or Basmati rice

1 cube of grass-fed beef broth

1 cube of vegetable broth

2-3 medium-sized avocados

2tbsp. fresh lemon juice

Add pepper to taste

1 small broccoli or cauliflower

3 tomatoes, diced

1 bunch of kale, minced

4 handfuls spinach, minced

1 big red pepper, diced

200 gr. fresh mixed salad greens

½ cup of well-rinsed black or green olives, halved 

½ cup capers in olive oil (low sodium)

½ tsp. cumin

1tsp. coriander

1tsp. rosemary

1tsp. thyme

2 tbsp. avocado oil

2 tbsp. flaxseed oil

2 tbsp. sesame oil

Add salt to taste (½ tsp. Himalayan salt)

*If you want to add some spiciness, add 1tbsp. of unsweetened mustard

Like all of you, I am a unique individual with particular needs that I have learned to listen to and that I have really acknowledged over the last 8 years. I’ve learned to focus on my energy levels, to observe my body’s reactions to food, situations and emotions, and to respond to them accordingly.
