    Ingredients ¼  cup almonds, chopped ¼  cup Brazil nuts, chopped ¼  cup walnuts, chopped ⅓  cup dates ⅓  cup coconut flakes, ground ½  cup orange carrots, grated ½  cup purple carrots, grated ¼  cup parsnip, grated ½  cup gluten-free rolled oats 1 tsp. ground cinnamon ¼ tsp. ground black pepper ¼ tsp. vanilla extract ⅛ tsp. fresh lemon juice     Instructions Grate the carrots and parsnip and put them aside.     Broccoli-Spinach Nuggets

    Ingredients 4 cups broccoli florets (the equivalent in florets to 3 medium-sized broccoli) 1 ½  cups raw spinach 3 eggs 1 ½ cups gluten-free oats,  ground 2 tbsp. nutritional yeast 1 tbsp .coconut amino 1  tsp. fresh garlic, crushed 2 – 3 tbsp. extra virgin olive oil 1 tsp. dried rosemary ½ tsp. nutmeg ¼ tsp.     Apples to Nosh At Any Time

    Ingredients 2 – 3 apples ¼  cup of almond or cashew butter, or tahini  ¼  cup of Brazil nuts, sliced ¼  cup of nuts (almonds, macadamia, hazelnuts, pecans, and pistachios), chopped ¼  cup of coconut flakes, grated ¼  cup of dates, sliced Instructions Cut the apples into ring-shapes (slicing from top to bottom) and remove the core.  Spread the butter all over each ring-shaped piece and top some with the sliced nuts and others with the chopped nuts.  Finally, sprinkle coconut flakes over the apple rings with sliced nuts, and sprinkle dates over the apple rings with chopped nuts.
