Carrot-Parsnip Balls


¼  cup almonds, chopped

¼  cup Brazil nuts, chopped

¼  cup walnuts, chopped

⅓  cup dates

⅓  cup coconut flakes, ground

½  cup orange carrots, grated

½  cup purple carrots, grated

¼  cup parsnip, grated

½  cup gluten-free rolled oats

1 tsp. ground cinnamon

¼ tsp. ground black pepper

¼ tsp. vanilla extract

⅛ tsp. fresh lemon juice

  • Grate the carrots and parsnip and put them aside.
  • Put the almonds, walnuts, Brazil nuts, dates and coconut flakes together in a food processor or blender and process until a sticky mixture forms. 
  • Add the mixture to the grated carrots and parsnip.
  • Add the rolled oats, cinnamon, black pepper, vanilla extract, and lemon juice and mix everything with your fingers, so that they stick together. 
  • Form about 15-18 energy balls depending on the size you want.
  • After you have formed the balls, keep them in an airtight glass jar.

Like all of you, I am a unique individual with particular needs that I have learned to listen to and that I have really acknowledged over the last 8 years. I’ve learned to focus on my energy levels, to observe my body’s reactions to food, situations and emotions, and to respond to them accordingly. I have learned to put myself beyond everything and to get to know myself for who I am, Tatiana. It has been a very constructive and arduous journey and one that has taught me to be patient and to give each change or modification time to take effect. This brief introduction is to tell you why I developed a deep interest in holistic nutrition due to many circumstances in my life.
